In the secadero air tempers the pieces naturally. The proper climate and humidity confer the character to our Iberian ham. We do it in our secadero through the traditional process of opening the windows.

As the canons mark, we mature the best hams in the world, letting natural air and seasonal changes do their job. Only when the miracle has been performed, our hams will be chosen to satisfy the palate of the most demanding.
